Fa La La La Persimmons


Persimmons are in season and are very versatile. An ideal fruit to introduce this Holiday Season with delicious desserts such as the Lemon Glazed Persimmon Bars or even Persimmon cookies or why not substitute the traditional Holiday fruit cake with a Persimmon Bread.





Lemon Glazed Persimmon Bars source: epersimmons.com
This is a wonderful recipe. It makes about 30 bars

1 cup persimmon pulp1/2 cup oil1 tsp. nutmeg
1 tsp. baking soda2 cups flour1 tsp cloves
1 egg1 tsp. salt1 cup raisins
1 cup sugar1 tsp. cinnamon1 cup nuts
Lemon glaze : Blend1 cup powdered sugar& 2 T. lemon juice
Directions:

Mix persimmon pulp with baking soda and set aside. In a large bowl, lightly beat egg, then stir in sugar and oil. Sift dry ingredients and add to mixture. Stir in persimmon pulp, raisins, and nuts. Spread evenly in a greased and floured jelly roll pan (10x15 in.) Bake at 350° for 25 min. Cool on rack for 5 min. Drizzle with lemon glaze.

1 tsp. Baking soda
1 c Sieved persimmon pulp
1/2 c Butter or margarine
1 c Sugar
1 Egg
2 c Flour
1 tsp. Baking powder
1/2 tsp. Salt
1/2 tsp. Ground cinnamon
1/2 tsp. Ground cloves
1/2 tsp. Ground nutmeg
1 c Raisins and/or nuts.


Stir soda into persimmon pulp and set aside. Cream butter and sugar together.
Beat in egg, then persimmon mixture.
Sift flour with baking powder, salt, cinnamon, cloves and nutmeg.
Add to creamed mixture along with raisins or nuts. Mix thoroughly.
Drop by teaspoons onto greased baking sheets and bake at 350F 8 to 10 minutes.










Persimmon Bread

Ingredients:
Makes 1 loaf (6 servings).

2 eggs
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
1/2 cup vegetable oil
1 teaspoon ground cinnamon
1 cup persimmon pulp
1/2 cup chopped walnuts
1 teaspoon baking soda
1/2 cup raisins

Directions:
Directions
1. Preheat oven to 325 degrees F (165 degrees C). (Decrease temperature by 25 degrees for dark pans). Oil a 9 x 4 inch pan.
2. In a small bowl, combine flour, cinnamon, salt, nuts, and raisins.
3. In a large bowl, blend eggs, sugar, and oil. Mix baking soda into pulp, and add to sugar mixture. Fold in flour mixture. Pour batter into prepared pan.
4. Bake for 75 minutes (check earlier), or until tester inserted in the center comes out clean.

Come Celebrate Fourth of July with me and my friends as I will be making these wonderful, colorful and delicious red white and blue desserts. For a refreshing touch I recommend the red white and blue salad, if you enjoy baking then you'll love the red white & blue squares and for all those parfait lovers like me then a must have is my favorite red white and blue parfait yummy!!!

14-16 ServingsPrep: 30 min. + chillingIngredients
1 package (3 ounces) berry blue gelatin
2 cups boiling water, divided
2-1/2 cups cold water, divided
1 cup fresh blueberries
1 envelope unflavored gelatin
1 cup heavy whipping cream
6 tablespoons sugar
2 cups (16 ounces) sour cream
1 teaspoon vanilla extract
1 package (3 ounces) raspberry gelatin
1 cup fresh raspberries
Whipped topping and additional berries, optional
Directions
In a large bowl, dissolve berry blue gelatin in 1 cup boiling water; stir in 1 cup cold water. Add blueberries. Pour into a 3-qt. serving bowl. Refrigerate until firm, about 1 hour.
Meanwhile, in a saucepan, sprinkle unflavored gelatin over 1/2 cup cold water; let stand for 1 minute. Add the cream and sugar; cook and stir over low heat until gelatin and sugar are completely dissolved. cool to room temperature. Whisk in sour cream and vanilla. Spoon over the blue layer. Refrigerate until firm.
In a large bowl, dissolve raspberry gelatin in remaining hot water; stir in remaining cold water. Add raspberries. Spoon over cream layer. Chill until set. Garnish with whipped topping and additional berries if desired. Yield: 14-16 servings.




















RED, WHITE AND BLUE DESSERT SQUARES source: cooks.com

CRUST:

1 1/2 c. all-purpose flour
3/4 c. firmly packed brown sugar
3/4 c. butter
3/4 c. finely chopped walnuts

FILLING:

1 pt. (2 c.) fresh blueberries
1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1 (7 oz.) jar marshmallow creme
1 (8 oz.) container frozen whipped topping, thawed
1 1/2 pt. (3 c.) fresh raspberries

GLAZE:

1 1/4 c. sugar
1/4 c. cornstarch
2 c. water
1 (3 oz.) pkg. raspberry flavor gelatin

Heat oven to 325 degrees. Lightly spoon flour into measuring cup; level off.
In large bowl, combine flour and brown sugar; mix well. Using fork or pastry blender, cut in butter until coarse crumbs form. Stir in walnuts. Lightly press mixture in ungreased 15x10x1 inch pan. Bake 10-15 minutes at 325 degrees. Cool.

Sprinkle blueberries over cooled crust. In large bowl, beat cream cheese and vanilla until light and fluffy. Add marshmallow creme; beat just until combined. Fold in whipped topping. Spread over blueberries. Refrigerate about 1 hour.

Sprinkle raspberries over top of cheese mixture. In medium saucepan, combine sugar, cornstarch and water, mix well. Cook and stir over medium heat until mixture thickens and becomes clean. Remove from heat; stir in gelatin until dissolved. Cool glaze 20-30 minutes or until lukewarm. Carefully spoon glaze over raspberries. Refrigerate about 1 hour until firm. Cut into squares. Store in refrigerator. 25 servings.

8 oz. cream cheese, softened
1 16-oz. container vanilla yogurt
2 Tbsp. lemon juice
2 pints fresh strawberries, washed, hulled and sliced
2 pints fresh blueberries, washed
Whipped topping for garnish
8 parfait glasses or other clear glasses

Combine cream cheese, vanilla yogurt and lemon juice and mix well. Place 1/4 cup of cream cheese mixture in the bottom of each glass followed by 1/4 cup strawberries. Repeat with cream cheese mixture and blueberries. Top with whipped topping and serve. These desserts are tasty, colorful and right in keeping with the red, white and blue holiday. You could add a layer of sponge cake in each glass if you want to make the dessert a little more hearty.

The Skinny: Use fat-free yogurt, light cream cheese and low-fat whipped topping. For those of you that don't remember, whipped topping is prepared whipped cream-like topping that comes in a plastic container. It isn't as good as real whipped cream but is easy and you can get low fat or fat-free varieties

It doesn't get any more patriotic than this- you'll wow your guests with the colorful layers!

1 shot of Grenadine
1 shot of Blue CuraÁao
1 shot of Light Cream

Build the layers in a short cocktail glass. (Hint: pour the liquid over the back of a spoon as you add them to the glass to help layer.) Serve and enjoy.

My dear friends and readers Easter is here and I would love to share with you a few delightful desserts I came across during my virtual escape. Thinking coconuts and jelly beans I found this adorable lamb cake recipe one can share with friends and family on Easter Day. You'll love the cram filled cupcakes video, three sisters will show you how to create this delightful sunshine treat. Easter make me just want to and smell the roses or I should say all the beautiful Spring flowers and what better way to celebrate Spring and Easter than with the flower garden cake and/or Tulip Cookies. I want to finish with the Orange Blossom Drink, one that is sure to stand out!

Ingredients
1 (18.25 ounce) package white cake mix
1 (16 ounce) can white frosting
3 cups flaked coconut
2 black jellybeans
1 black shoestring licorice
2 drops green food coloring


Directions
1.Prepare cake mix according to package directions and bake in two halves of a stand-up lamb cake pan. Cool completely.
2.Stick the two halves of the lamb together using white frosting. Sit the lamb up and frost the entire lamb. Coat the entire lamb with coconut. Decorate with jelly beans for eyes, and licorice for whiskers. Tint any remaining coconut with green food color and use as grass.

1 10-inch angel food cake
6 egg yolks
1-1/2 cups sugar
1 envelope (1 tablespoon) gelatine
1/4 cup lemon juice
3/4 cup orange juice
Grated rind of 1 lemon
6 egg whites
1 cup well-drained crushed pineapple
12 maraschino cherries, cut up

Tear angel food cake into pieces in large bowl. Beat egg yolks in top of double-boiler; combine 3/4 cup sugar and gelatine and stir into egg yolks; add lemon juice, orange juice, and lemon rind. Cook over hot water stirring constantly until custard mixture coats silver spoon. Cool.

Beat egg whites until frothy, then beat 3/4 cup sugar in gradually, beating well after each addition, then continuing to beat until stiff and glossy. Then fold whites into cooled custard mixture along with crushed pineapple and chopped maraschino cherries. Finally, pour custard mixture over angel food cake pieces.

This five-ingredient dough can be made up to three days ahead.

Prep Time: 25 minutes
Cook Time: 14 minutes
Other Time: 3 hours 50 minutes
Yield: Makes about 2 dozen (3 1/2-inch) cookies


Ingredients
1 1/2 cups butter, softened
1 cup powdered sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour, sifted
Simple Icing
Preparation
1. Beat butter, sugar, and salt at medium speed with a heavy-duty electric stand mixer until creamy. Add vanilla; beat until well blended. Gradually add flour, beating at low speed until blended. (Dough will be very soft.)

2. Divide dough into 2 equal portions; wrap each with plastic wrap, and flatten into a disc. Chill 2 to 24 hours.

3. Preheat oven to 350°. Unwrap 1 dough disc on a well-floured surface. Cover with a large piece of plastic wrap, and roll to 1/4-inch thickness; cut into desired shapes with 3 1/2-inch cookie cutters. Place 1 inch apart on ungreased baking sheets. Chill 15 minutes. Repeat procedure with remaining dough disc.

4. Bake at 350° for 14 to 17 minutes or just until edges are lightly browned. Cool on baking sheets 5 minutes. Transfer to wire racks, and let cool completely (about 30 minutes). Decorate cookies with Simple Icing. Let stand 1 hour or until icing is firm

1.0 oz. Gin
0.5 oz. Sweet Vermouth

Directions: Fill mixing glass with ice. Add all ingredients, stir, and strain into chilled glass.

Friends Super Bowl Sunday is almost here, like me I'm sure many of you are going to throw a Super Bowl Party.

Are you ready ? I sure am.

I came across some wonderful finger food recipes and a fun and exciting cocktail to share with your family and friends.

Here is how you make this alcoholic Super Bowl drink:



4 oz bourbon

8 oz lemonade

8 oz iced tea (unsweetened)

Combine bourbon with iced tea in a mixing glass filled with ice. Strain equal parts into two Hurricane glasses filled with ice. Top with lemonade. (Makes two 12-ounce servings.)





Confetti Quesadillas with Colby and Monterey Jack Cheese source 3aday.org










12 soft corn tortillas*
1 cup (4 ounces) shredded part-skim Monterey Jack cheese
1 cup (4 ounces) shredded part-skim Colby cheese
1/2 cup fresh corn kernels or black beans
1/2 cup coarsely chopped cilantro
1 red bell pepper, finely minced
1 jalapeño pepper, finely minced
Cilantro Yogurt "Sour Cream"
2 cups plain nonfat yogurt
1/4 cup finely minced cilantro
1/2 teaspoon salt
Preheat large skillet over low heat.
Line up six tortillas. Divide cheese, corn, cilantro and peppers between the tortillas, then cover each with a second tortilla.
Place a tortilla on the dry skillet or grill and warm until cheese is melted and tortilla is slightly golden, about three minutes. Flip and cook other side until golden, about one minute. Repeat with remaining quesadillas. Cut each into 6 wedges.
Serve each wedge with a dollop of Cilantro Yogurt "Sour Cream."
Makes 36 wedges.

Cilantro Yogurt "Sour Cream": Line a large strainer with a coffee filter or paper towel and place over a mixing bowl. Pour in yogurt and let sit until some of the liquid has drained away and the yogurt is the consistency of sour cream, about one hour. Transfer to small mixing bowl; stir in cilantro and salt. Makes about 1 1/2 cups. ( Straining yogurt gives you a no-fat version of sour cream with a light tang that blends nicely with cilantro. Try it with chili and other spicy dishes as well.)

* Flour tortillas (6 to 7-inch size) can be substituted for the corn tortillas.

1/2 cup rice vinegar
1/4 cup reduced-sodium soy sauce
1 cup chopped green onions, divided
4 garlic cloves, minced
3 teaspoons Crisco® Extra Virgin Olive Oil or Canola Oil, divided
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
3/4 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 tablespoon cornstarch
1 prebaked 12-inch thin pizza crust
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded part-skim mozzarella cheese
2 tablespoons sliced almonds
Directions
In a small bowl, combine the vinegar, soy sauce, 1/2 cup onions, garlic, 1 teaspoon oil, pepper and cayenne. Pour 1/2 cup into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 30 minutes. Cover and refrigerate remaining marinade.
Drain chicken, discarding marinade. In a large nonstick skillet over medium heat, cook chicken in remaining oil until no longer pink. Combine cornstarch and reserved marinade until blended; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat.
Place the crust on an ungreased baking sheet; top with chicken mixture. Sprinkle with cheeses. Bake at 400° for 12 minutes. Top with almonds and remaining onions. Bake 2-3 minutes longer or until cheese is golden brown. Yield: 12 slices.


Nutrition Facts: 1 slice equals 143 calories, 5 g fat (1 g saturated fat), 19 mg cholesterol, 327 mg sodium, 15 g carbohydrate, 1 g fiber, 10 g protein.

Hello dear friends, I'm glad to be back and excited to start publishing my Weekly Coffee News directly on shesdaily.com blog.

This weeks blog posting of LWC ( Lisa's Weekly Coffee) is dedicated to Valentine's Day and precisely to a Romantic Dinner for 2.










My idea of a Romantic Dinner for 2 is all about food at it's simplicity with a touch of love. Therefore I'm sharing with you a few recipes I came across that seem to me to be easy to prepare and are themed well to Romance.


Appetizer and Champagne

Get a little flirtatious with this pineapple and Champagne .

Ingredients:
•2 pieces fresh pineapple
•1/2 oz Cointreau
•1/2 oz vodka
•1 oz pineapple juice
•3 oz Champagne
•maraschino cherry for garnish
Preparation:
1.Muddle the pineapple pieces and Cointreau in the bottom of a mixing glass.
2.Add the vodka and pineapple juice.
3.Stir well.
4.Strain into a chilled cocktail glass.
5.Top with Champagne.
6.Garnish with the maraschino cherry.
