Since President's Day is only a few days away and many are going to enjoy a fabulous three day weekend, I thought to myself why not celebrate this wonderful Holiday buy making it special with an absolute easy and fun menu'.
When I think of President's Day, Cherries seem to come to mind. Why is that? One time while visiting in Washington DC i recall seeing the beautiful Cherry Blossoms trees near the white house, what a beauty!!

And now I thought why not search for some fun and delicious recipes to create for my family and obviously share with my friends and readers. I love cherries, they are sweet and absolutely delicious and they easily accompany any meal.

Let's start with a true American cocktail : The American Dream Drink made with black cherry rum. To accompany the cocktail I was thinking something with cherry tomatoes, but when I came across the Double Tomato Bruschetta I simply couldn't resist not including this recipe in the menu. As for an entree, since I love chicken and find it to be a very versatile food which many enjoy why not pinch it up with some cherry sauce, so I'm welcoming The Cherry Chicken!

Ok here comes my favorite part: Dessert! Hurray!! for the Retro Cherry Pound Cake a true American Classic.

1 oz. PAMA Pomegranate Liqueur
1 oz. black cherry rum
1 1/2 oz. Pom Wonderful pomegranate cherry juice
1 1/2 oz. fresh sour mix (2 parts simple syrup, 2 parts lemon juice, 1 part lime juice)
Blueberries and white fondant stars for garnish

Cut mini stars out of white fondant. Wet the back of each star and press into the inside of a cocktail glass so it sticks, then let sit for about 5 minutes. Fill a mixing glass with all ingredients add ice , shake and strain into glass. Garnish with blueberries on a pick if desired

Ingredients
6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese
Directions
1.Preheat the oven on broiler setting.
2.In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
3.Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.
4.Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.
5.Broil for 5 minutes, or until the cheese is melted.

Ingredients:
2 boneless, skinless chicken breast
1 Tbsp butter
Four
1 cup dry white wine
1 Tbsp sugar
1 tsp allspice
2 cups pitted sweet cherries with juice

DIRECTIONS: Flour chicken breast & brown in a deep fry pan with the butter. Add remaining ingredients, cover & simmer until done.

SERVINGS: 2 TIME: 30 minutes

SERVING TIPS: Serve with steamed rice with pan sauce & a green vegetable.
