We had a delicious lunch today and I thought I would share our recipe with you (I tend not to use cook books).
We love game, not only is it delicious and tastes of nature but I like the fact that the animals were wild and living a full life before they were killed. Also, if you buy game from farms it's much cheaper than the supermarket.
So here's what you need to make the warming autumn salad:
Ingredients
4 pigeon breasts
4 rashers of bacon cubed
1/2 large or 1 small butternut squash (or pumpkin)
chilli flakes
Worcester sauce
Rock salt
Black pepper
Mixed baby spinach and rocket salad leaves
Bread cut into croutons
Thyme
Good quality olive oil
How to make it
Chop the butternut squash into small cubes (1 cm) lay out in a baking tray and add a dash of Worcester sauce, crushed black pepper, thyme, rock salt, olive oil and some chilli flakes. Put in the oven for approx 30 mins at 180 degrees.
15 mins before the butternut is ready, add the chopped bacon and the whole pigeon breasts to a frying pan. Fry the pigeon breasts for 2 to 3 mins on each side and allow to rest on a chopping board for 5 mins. Cut the sliced bread into quarters and sprinkle with thyme, black pepper and olive oil. Add these to the oven on a separate tray for 5 mins.
To serve, add the salad leaves and butternut to the plate and slice the pigeon breasts.
And here it is....
I think this would also be nice with pickled walnuts or pine nuts.
