I made some yummy fish cakes yesterday and forgot to mention them. I rarely use a recipe and this was no exception. Here's how I made them:
3 fillets of vacuum packed mackerel
2 eggs (beaten)
3 slices of bread (white or brown)
Fresh basil
1/2 a red onion
Seasoning
(makes 10)
First of all I put the bread in the liquidiser and then put to one side, then I liquidised the fish, onion, eggs, basil and seasoned. I mixed the fish mix and the bread crumbs together, moulded into balls and fried in olive oil. Voila! 5 mins of frying later and some salad and we had a lovely dinner! I also put the rest in the freezer so we have 2 or three dinners out of £2 worth of fish. :-)
P.S Having seen some of your lovely blogs where you get so many bargains for mere pence I've decided to try my hand at picking up a couple of bargains myself by visiting the Horsham car boot sale on Saturday. I haven't been to a boot sale for years! I'm after an eiderdown, a wool blanket and some pretty things! :-)
